flourless peanut butter cookies

let me first say that these cookies are to die for!
they are so easy and only take minutes to whip up and i'm sure most of you have all the ingredients in your pantry right now.
so what are you waiting for!
here's the recipe adapted from joy the baker!

1 cup all-natural chunky or smooth peanut butter

1 cup sugar (1/2 cup brown sugar and 1/2 cup granulated sugar)
1 egg
1 teaspoon baking soda

Preheat oven to 350 degrees F. Grease a baking sheet with butter and set aside. In a mixer combine peanut butter and sugars until well combined, about 2 minutes. Add egg and baking soda and mix for another 2 minutes. Roll into walnut sized balls and create a cris-cross pattern with a fork.  Bake for 10 minutes, until lightly browned. Cool on a baking sheet for two minutes.

you could toss so many things in this batter.
chocolate chips, peanuts, pecans, peanut butter chips
the possibilities are endless!

weekend in photos

another amazing weekend gone.
i vote for the 2 day work week and the 5 day weekend.  who's with me?
this weekend i hosted a cookout with a couple of our friends.
hamburgers, roasted potatoes and onions, and mashed cheesy cauliflower.
of course there was a cheese board for pre-dinner nibbling, margaritas,
and a chocolate cake with bailey's irish cream frosting.
i must say, sometimes i do impress myself.
it was a fun night filled with giggling!

weekends are never long enough

even when we have an extra hour of daylight, there's still not enough time on the weekends.
the hubby and i drove down to our favorite city, charleston, and spent the day on saturday.
we discovered morris island with driftwood scattered all around and a historic lighthouse.
glistening sand dunes with sea grasses waving in the wind.
romantic gardens that take me back to childhood and rekindle my love of the secret garden.
colorful houses that are the trademark of this beloved city.
tiny ferns that grow between brick walls.
bike rides that make my heart long for perfect days like this again soon.
it's always hard for me to leave this place, even though i know we will be back soon.
it's one of those places that my soul longs to call home.

starting small

i've been planning a small garden in my head and hopefully this week
the hubby and i will have the materials and be all set for planting by the weekend!
while it's still cool and frost is not out of sight, i'm going to start with a mixture of greens:
varieties of lettuce, spinach, kale, onions and a few other cooler temp veggies.
once it gets too warm for these things, i will plant tomatoes and summer time veggies!
so excited about this.  time to start polishing up my green thumb!
